The solution described here works with Ubuntu 14.04, 15.04 and 15.10.
To increase it you need to increase the video memory in the VMWare settings for your virtual machine, install the following packages and restart the system.
sudo apt-get install virtualbox-guest-dkmssudo apt-get install virtualbox-guest-x11
Should you get an error message about unmet dependencies remove libcheese-gtk23 and reinstall the xserver:
sudo apt-get remove libcheese-gtk23sudo apt-get install xserver-xorg-coresudo apt-get install -f virtualbox-guest-x11
Now restart the system and you will be able to change the resolution and resize the screen.
